Dessert Pancakes

Ingredients

2 eggs

2 cups unsweetened soy rice or coconut milk

1 1/2 cups whole wheat self-raising flour (or gluten free self raising flour*)

2 teaspoons vanilla extract

Honey or fresh fruit

LSA or hemp seeds

Directions

Beat the eggs with 1 cup of the milk.

Sieve in half the flour, then add the rest of the milk and flour alternately.

Beat well, removing all lumps and adding the vanilla extract. Let mixture stand for 30 minutes.

Brush a crepe pan lightly with cold-pressed virgin olive oil then heat the pan.

When the pan is hot, pour one twelfth of the mixture in. The pancakes are ready to turn over when bubbles appear.

Serve with fresh lime or lemon juice and sweetener (such as honey or Nature Sweet Sugar Substitute) , or fresh fruit sprinkled with LSA or hemp seeds.
